Taking up the cause I managed to make and enjoy some Potato and Leek soup this week. Also the kumquats in the market were the best so far this season, very sweet with oh so tender skin. No worries if the week was over before you even got started. EWS has another pair of fruit and veggie suggestions for week #2.
Moving on from leeks to asparagus ! Asparagus is another nutrition surprise. This low GL vegetable is loaded with vitamins A and C and is a great source of fiber, folate and vitamin K ! And if that isn’t enough for you, turns out asparagus has some pretty impressive antioxidants, gluthione and saponins, that are hugely important in reducing oxidative stress and decresing your risk of certain cancers. Not bad for a skinny little stalk of aspargus.
When choosing aspargus look for straight green stalks with tight, closed tips that are either dark green or purple. Try to choose stalks that are uniform thickness so they all cook at the same rate.
Enjoy aspargaus stir-fried, roasted ( see recipe) or lightly steamed.
Preheat oven to 400 degree F ( 200 degrees C )
Toss cleaned asparagus with a little olive oil, enough to coat it.
Spread on a baking tray.
Sprinkle with sea salt, fresh ground pepper and some chopped garlic.
Pop in the oven for 10- 15 minutes. For crisp asparagus, take out when bright green. Sprinkle with your choice of lemon juice, parmesan cheese or balsamic vinaigrette and enjoy !
What speaks of spring and goes very well with asparagus ? Of course you must be saying strawberries. While they aren’t an exotic fruit, they are full of nutritional potential. Strawberries are another great source of vitamin C and packed with a variety of anti-oxidants including ellagiac acid. Ellagiac Acid is a polyphenol anti-oxidant that has helpful anti-viral and anti-bacterial properties and that spells support to the immune system. Strawberries are in season now and I just gave you two good reasons to start including them in your diet. Take this opportunity to eat them fresh and add a dollop of whip cream just for fun !
